I have successfully configured the component to retrieve emails and post articles to the "Blog" category of articles. I have not been successful making a cron script do the lifting, but I will tackle that later.

For now my question is can I get the component to generate article thumbnails for me from attached images?

No, component doesn't generate thumbnails, only include attached pictures as is. You can make thumbnails with external content plugin, there are many free plugins for joomla to do this.
